Taco Stuffed Baked Potatoes

What do you get when you combine two of my very favorite foods and one handy-dandy Instant Pot? Instant Pot taco-stuffed baked potatoes, of course! 

This scrumptious and easy meal idea is perfect for busy nights or when you just need a good, hearty meal to fill your belly. It can be made in about an hour and really doesn’t take much work on your part! Just let the Instant Pot do all the hard work!

Instant Pot Taco Stuffed Baked Potatoes

Prep: 10 minutes
Cook Potatoes: 30 Minutes
Cook Ground Beef: 10 Minutes

Serves: 4

Ingredients:

1 lb ground beef 90/10
6 to 8 red potatoes
1 cup water
1 package taco seasoning
2 Roma tomatoes; diced
3 cups cheese
1 cup sour cream
1 red onion; diced
cilantro for topping

OMG! These taco-stuffed baked potatoes look so dang good. And, they can be made in the Instant Pot! I know what's for dinner tonight!

Instructions:

Place water into the instant pot.

Add the trivet and place the potatoes on top.

Place lid on the instant pot then set the valve to sealed position.

Press the pressure cook or manual button and set timer to 30 minutes.

When the pot stops counting then release the pressure via the valve.

Potatoes can be remove to a baking dish and kept warm in the oven at the lowest over temperature setting if you only have one instant pot. If you have two instant pots then just keep the potatoes in the pot until needed.

Place ground beef and half the red onion into the instant pot.

Set to sauté mode and cook until beef is browned.

Add in taco seasoning and stir well.

Top the ground beef on the potatoes.

Add all your favorite toppings like tomatoes, onions, sour cream, cheese, and cilantro.

Enjoy these super yummy taco-stuffed baked potatoes at your next party! It’s a mixture of a taco bar and a potato bar! Everyone can create their own delicious dinner and it saves you tons of work! Bake the potatoes ahead of time, chop all the fixin’s a few days ahead and then just serve the meat in the Instant Pot or your Crockpot! Cooking and cleanup will be a breeze!
