Quick & Easy Meals for Busy Families

 

Are you always looking for easy meals for busy families, like yourself? Me, too!

By doing an hour’s worth of prep time on Sunday, it’ll be an easy trick to prepare homemade meals in minutes during the workweek.

Take 4 lbs ground beef and season with 1T each oregano, garlic powder, and onion powder.

Divide into four equal packets, wrap, and place three in the freezer. Add 1/2 c Italian bread crumbs and an egg to the remaining pound.

Shape into meatballs and bake in 350 ovens @30 minutes.

Let cool, wrap, and place inside the refrigerator.

Remember to thaw out a new package of ground beef each day.

5 Easy Meals for Busy Families

Day 1: SPAGHETTI & MEATBALLS

Put the pasta on to boil. Heat oven to 350, pop meatballs in for 10 minutes.

Blend 1/2 stick butter w/ 1tsp minced garlic, spread on halved French bread loaf, and pop into the oven for 5-7 minutes.

Place a jar of spaghetti sauce in a microwavable container, cover with a paper towel, and cook for 2-3 minutes in the microwave.

Meanwhile, drain pasta, top with meatballs. Pour spaghetti sauce over pasta and meatballs.

Take the bread out of the oven, open a bag of mixed greens, top with sliced tomato.

Put out dressings for salad and parmesan cheese for pasta.

Day 2: Greek Pita

Cut a large onion in half, mince one half, slice the other into thin rings. Put the minced onions in a skillet with ground beef.

Slice tomato into thin wedges set aside.

Cut a cucumber in half, slice one-half thin and mix with onion rings, shred the other half, and place in a bowl.

To this, add one container sour cream and 1 tsp garlic powder.

Stir well and refrigerate.

Drain the ground beef, add a small can drain sliced black olives, a small can of tomato sauce, and 1/4 tsp ground cinnamon.

While this heats, drain a can of garbanzo beans, mix in a bowl with the set-aside cucumber and onion.

Make a dressing of 2 T each olive oil and red wine vinegar and 1 T oregano.

Drizzle over the bean mixture.

Serve a dollop of the meat on a piece of pita topped by the sour cream mix and fresh tomatoes, with the bean salad as a side dish.

Day 3: Tacos

Fry ground beef in a skillet.

While it cooks, chop tomatoes, onions, lettuce, and cilantro.

Drain fat from the beef once it is cooked through.

Add 1tsp each chili powder and cumin, and one can tomato sauce, heat through.

Cook refried beans in the microwave for 2 minutes.

Set out shredded cheese, sour cream, salsa, and taco shells.

Have family serve themselves, with the beans as a side dish.

Day 4: Beef Stroganoff

Cook a package of egg noodles in boiling, salted water.

Fry ground beef in a skillet.

Cut an onion into rings, add an 8-oz package of sliced mushrooms and sauté with the beef.

When ground beef/veggie mix is cooked, drain grease.

Return to low heat, add 1/2 can French onion soup that has been mixed with 1 T cornstarch.

Once thickened, remove from heat and add a few heaping tablespoons sour cream and stir well.

Microwave a can of green beans or peas for 3 minutes.

Serve beef mixture over noodles with peas or beans on the side.

Day 5: Fake Steak Sandwiches

Fry ground beef in a skillet.

Slice one onion and one green pepper into strips and sauté in a separate pan, set aside—

Preheat oven to 400.

Drain the ground beef, then return to low heat with 2T each mayonnaise and prepared Italian salad dressing, heat through.

Slice a wedge out of six crusty hoagie rolls.

Spoon a generous portion of the ground beef into each roll, top with a share of the sautéed veggies, top each sandwich with a generous smother of mozzarella cheese.

Place on the top shelf in the oven and allow to cook 5-7 minutes or until cheese has melted and is bubbly.

Serve sandwiches with store-bought coleslaw.
