Easy Broccoli Cheddar Soup

January is National Soup Month and in my opinion, that’s something worth celebrating! We love soup at our house, but chicken noodle soup gets old fast and I’m not a very creative chef. That’s why I was stoked to find that my entire family loves this easy broccoli cheddar soup!

Soups are THE perfect meal to warm your soul on cold winter days. I love whipping up a big batch of hearty soup and freezing half of it for later! Then, when we are super busy (think Christmas season!) we can just grab our frozen soup, thaw and eat!

Soups are budget-friendly and an easy way to fill your belly, too! No matter what kind of soup it is that you love, soup will leave you feeling full and satisfied. 

My whole family loves this easy broccoli cheddar soup and it is PERFECT for busy weeknights!

Easy Broccoli Cheddar Soup

This easy broccoli cheddar soup pairs perfectly with homemade bread or rolls! That’s all you need for a scrum-diddly-umptious meal!

Ingredient List:

3 cups broccoli florets
2 cups cheddar cheese, shredded
1 large carrot, matchstick cut
2 cups half & half
2 cups chicken or vegetable broth
1⁄2 stick butter
1⁄2 yellow or white onion, chopped
2-3 garlic cloves, minced
4 tablespoons flour
1⁄4 teaspoon paprika
1⁄4 teaspoon nutmeg
Salt & pepper to taste

Preparation Instructions:

In a large pot, over medium high heat, cook onion in butter until tender
Add in garlic and saute for 1 minute
Sprinkle in flour and whisk until golden brown
Stir in broth, broccoli, carrots, nutmeg, and paprika
Bring to a boil, then reduce heat and simmer for about 15 minutes or until vegetables
are tender but firm
Stir in half & half and cheese
Simmer for an additional 2 minutes or until cheese has melted
Season with salt & pepper to taste
Serve and enjoy!
