Spicy Black Bean Soup

This hearty soup is one of the most budget-friendly vegetarian recipes around, and it is packed with protein and flavor thanks to a blend of black beans, onions, garlic and spices. To make spicy black bean soup, start by heating a tablespoon of oil in a large pot over medium heat.

Add one chopped onion and two cloves of minced garlic and cook until the onion is softened, about 5 minutes. Next, add one tablespoon of chili powder, one teaspoon of cumin and one teaspoon of smoked paprika and stir to coat the vegetables. Add two cans of drained and rinsed black beans and four cups of vegetable broth.

Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes. Stir in one cup of frozen corn and a handful of chopped cilantro. Serve the soup hot with a dollop of sour cream and a sprinkle of cheese on top.

Spicy Peanut Noodles

Stir the peanut sauce into the vegetables and let it cook for another minute. Add the cooked noodles to the skillet and toss to coat them in the sauce. Serve the noodles hot, garnished with chopped peanuts and cilantro.
